Imagine spending some time in the French Quarter during the holiday season in the 1800’s… can you hear the clip-clopping sounds of horses pulling buggies down the cobblestone streets? When invited into a home along Royal Street, you see a small potted citrus tree on the table decorated with little gifts, paper ornaments, and tallow candles. Mistletoe is hung above the door to bring good fortune throughout the year.

He’s been addressed by many colloquial titles in his more than 50-year cooking career. “Star of the Show,” being the latest. Ted Brennan’s Decatur Executive Chef Lazone Randolph has resumed the role he was meant to play, and did, for decades.

When the descendants of New Orleans’ Brennan family restaurant dynasty stepped down from the renowned Brennan’s on Royal Street and reached out to begin another Brennan restaurant several blocks away, they knew they could count on Chef Lazone to join them in their new enterprise.

Growing up afraid of my shadow was beneficial in many ways. One way was that I never got to know the wrath of the nuns in my Catholic grade school; my fear for them came built in. That wasn’t as true for many of my classmates who, at one point in time, met the short end of a ruler, a paddle, a knuckle, or, the cold glare from the Habit.
